🍋 August Meal Plan

Hello friends, and happy August!!! I am soo excited to be back in my little corner of the internet! I have a ton of new recipes to share- many of which we've experimented with this summer, so I know they're good! I cannot actually believe school starts in two weeks, but I'm also looking forward to a routine. I hope you enjoy some of these meals! If you try them, please be sure to tag me! 🍋 April Meal Plan

🍋 March Meal Plan


Is anyone else wondering where February went?! I cannot believe March is already upon us! I am really looking forward to more sunshine and longer days! This month we start baseball, too, so there are plenty of crockpot meals in this meal plan to get us mamas through those long days. Plus, I've included some yummy grilled options for warmer weather.

1. Greek Chicken Bake served with mashed cauliflower
2. Chicken Fajita Stuffed Peppers (I plan to make the chicken in my crockpot with fajita seasonings and chicken broth, and I will make enough for leftovers for the next night because #baseballlife)

4. Teriyaki Chicken Lettuce Wraps (can easily serve this over rice noodles, if you prefer)

1. Hamburger soup (I plan to do this in the crockpot. Brown meat, and saute onion and garlic on the stove and transfer to crockpot.)

🍋 January Meal Plan



Not sure about y'all, but I absolutely LOVE the start of a new year. My hopes and dreams are fresh, my motivation is usually very strong, and I just get soo excited about the idea of a shiny, brand new year! I'm the same way about Mondays, too.

I am sooo pumped for a new year, and I have some really huge personal goals. One of them is to get my diet back in check. My plan is simple: no alcohol the entire month, lots of fruits and veggies, sticking to this meal plan to a T, and allowing myself one cheat meal each week (you'll see those listed each Friday). 

My hope for this blog, and this meal plan, is that maybe it can provide you with a source of inspiration, easy meal ideas and maybe start you down the path of a healthier lifestyle. One day at a time, friends!

🍋 October Meal Plan


I am soo excited that it is officially FALL! The shadows are getting longer, the air is crisper and the crockpot is getting used more. I asked my Instagram followers when is the socially acceptable time to eat soups, and most people said Oct. 1 or when the temps drop below 65. I had a few people message me and say ANYTIME, which I absolutely love! :)  I had fun searching for healthy soup options this month, and I'm excited to hear what y'all think! Here we go...

🍋 September Meal Plan

What a doozy the last half of August was! Amiright?! Virtual school has thrown my entire house for a loop, add in baseball, and the LAST THING I want to do is cook dinner! WOW! But, I have goals and I know I'll be SO MUCH HAPPIER if I cook healthy meals, and stick to my macros.

Good news is we only have a few days left of virtual school (#praisehands); however, we have tons of weeknight baseball this month. So, this meal plan is going to include a lot of leftovers, crockpot meals and meal prep. HERE WE GO!

🍋 August Meal Plan

I can't believe it's almost AUGUST! We are on our way home from the beach right now, and will quickly be gearing up for school. Wowzer! When school and sports start ramping up, these meal plans will really help us stay on track without thinking too hard. Winning! Currently loading all my groceries in my Kroger cart for grocery pickup.... :)

🍋 July Meal Plan

Hello, friends!! How are you doing? How is quarantine and corona life treating you? Hopefully better than our house! HA! Actually, now that distance learning has come to an end, we're getting into a really nice summer routine. The boys are older now, so they can entertain themselves a lot better and the fighting isn't as bad as last summer.

It has been so long since I've logged into this blog! I got sidetracked with life, and sadly with a lot of self-doubt. I started questioning whether this little corner of the internet was even important, whether people found my meal plans and recipes useful, and whether it was worth my time. I've had a LOVE for nutrition for a few years now, and HUGE SCARY BIG dreams within that field. And I'm here to tell you, that I'm sick and tired of watching other people chasing their dreams, I'm sick of sitting around waiting for an opportunity, and I'm sick of worrying about what other people think. This blog is important to ME because it helps me stay on track, gives me accountability and it's one step in the direction of my dreams. My hope is that it helps YOU stay on track and gives you accountability, as well!

I love sharing tasty, easy meals that fuel our bodies correctly and make us feel good! So that's what I'm going to do. And maybe somewhere a long the way, I'll take a leap of faith and tackle my big dream of getting my nutrition degree so I can help you out on a personal level.

So here we go...my meal plan for the entire month of JULY!

Why a month, Kate? That seems really aggressive.
A few reasons...planning a month at a time helps with variety. I don't know about you, but I get stuck in meal ruts so often. It's very easy to copy/paste from week to week, so this allows us to look at several weeks in a row and add variety. I also like it because you get it all done, and you can move on! There is no worse feeling on Sunday morning than meal planning for the next week....again. It seems to happen way too often! And lastly, because it allows you to use similar ingredients throughout the month without them going bad!



1. chili lime shrimp tacos with jasmine rice and mango salsa
2. air fryer chicken parmesan with zucchini noodles
3. verde chicken burritos (use my verde chicken)
4. bacon & bleu cheese burgers
5. green chile chicken enchiladas (use my verde chicken)
6. kielbasa sheetpan
7. mexican beef & zucchini skillet (I double zucchini and rotel)
8. BBQ chicken stuffed sweet potatoes
9. korean beef bowls with jasmine rice
10. teriyaki grilled pork chops with green beans
11. verde burgers (beef burgers topped with guacamole, green chilies and lettuce)
12. shrimp pesto packets
13. gnocchi sheetpan
14. turkey meatball subs with peppers & onions (Trader Joe's turkey meatballs, Rao's marinara sauce, sliced peppers & onions on sub rolls. Top with mozzarella and broil for a few minutes to get crispy!)
15. coconut shrimp tacos with island salsa (Trader Joe's frozen coconut shrimp on corn tortillas with TJ's island salsa.)
16. rigatoni with sausage, tomatoes & zucchini
17. skinny orange chicken with jasmine rice
18. buffalo turkey burgers
19. mexican stuffed peppers
20. blackened chicken with fiesta salad
21. chicken shwarma with jasmine rice and fresh veggie

September Meal Plan


I was looking at our family calendar for September and quickly realized that I needed to meal plan the entire month, or we'd be eating Taco Bell 30 nights in a row. HA! I'm exaggerating a little bit, but I'm serious when I say October will be here before we know it because our month is CRAY CRAY! Lots of baseball on week nights means easy meals that can be prepped over the weekend and re-heated before heading to the fields. I've added in some new meal ideas, which I think we're all excited about!

2. air fryer chicken parmesan (I plan to use Rao's marinara as the sauce w/ zucchini noodles)

4. air fryer chili lime cod w/ rice and mixed veggies

8. million dollar spaghetti
9. chicken sausage, red onion, butternut squash and brussel sprouts sheetpan (this doesn't have a recipe; I just chop it all up and and bake on a sheet pan for 40 mins at 400*)

12. grilled pork tenderloin w/ roasted potatoes and veggies

February Meal Plan

I found the January meal plan to be incredibly helpful for my family, so I'm sticking with it! There's a handful of new recipes in February's meal plan, plus a bunch of staples. I've had some interest in a Meal Planning 101 and/or Meal Prepping 101 series, so if you're interested in this- will you please comment below and let me know?!

I've been eating my Cream of Wheat Bowl for breakfast almost every single day (subbing the C.O.W. for oatmeal) and eating these delicious crunchwraps with Cut da Carb wraps. I'll have to do a separate post on those because they deserve it! Alright, here we go...

January Meal Plan


I've never actually done an entire month meal plan before, but I'm kinda digging it! I've had a lot of requests for this, so here we go...

A few notes:
- I generally plan my dinners first (in terms of macros) and then back into the rest of the day.
- Dinner is always dependent on our nightly commitments/activities, so you'll notice some nights are lighter than others.
- Breakfasts usually look the same with my cream of wheat bowl, gluten free oatmeal, or protein pancakes.
- Lunches are generally the same as well- I enjoy sunflower crunch salads, sandwiches on sourdough, or sourdough avocado toast with turkey meat and egg. Just depends how much time I have and how hungry I am. If I think of other lunch ideas, I'll share them.
- Yes, Fridays are leftover nights in my house. Helps to clear out the fridge for the next week, and helps on waste! You should try it!
- Yes, every Saturday night we go out on a family date night. This is my one splurge meal of the week.
